Yes I said the best! When my kids say this is the best I say ok this recipe gets the “the best” label in our house. These Banana muffins are especially good because they are gluten free!
After months of trying some less then great down to totally gross recipes we found this recipe. But if you know us you know we tweeked it a bit. Do you need or want to go gluten free. So many people are finding the health benefit of going gluten free. Like us the journey has been long. I cant tell you how many dry dense muffins we have made.

I LOVE food! So why is there this sense that if you need to eliminate something or plan to get healthier that all of the sudden you need tasteless dry food! BLAH! I know some people like very plain food. My mom for instance like very plain food little spice and no sauce. Like plain hamburger no ketchup no mayo. Um ya thats not me at all! Give me some yum!
So since going gluten free I needed some yummy recipes not dry “ok” recipes. Recipes that given the opportunity could possibly be better then there gluten counterparts. Anyone else hear me with this?
On top of that I have lots of kids all ages to please. When the plate is gone before I get 1 or they beg for more I know its a good recipe. This is it.
Make sure your bananas are fully ripe you know the ones with the brown spots. I love to buy bananas let the kids eat them for a week to 10 days then make some muffins.
The Best Gluten Free Banana Bread

Ingredients
- 12 bananas
- 1 1/3 c coconut oil
- 3 c sugar
- 2 tsp vanilla
- 6 c gluten free flour
- 4 tsp baking soda
- 1 t salt
Instructions
- Peel 12 bananas and place in a large mixing bowl
- use a potato masher and smoosh the bananas
- add the coconut oil, sugar, eggs and vanilla to bowl
- mix thoroughly
- add 6 cups of gluten free flour. Make sure it is not packed into the measuring cup.
- add baking soda
- Mix
- add in your add ins if desired but this recipe stands great on it own we usually don't add things in.
- scoop into muffin tins
- bake 350 for about 20 mins or until a skewer comes out clean.
